Fresh Sea Bass, locally caught, was the most beautiful thing at my local fish monger today. Sea Bass is sweet, and has a firm texture. When it’s this fresh, there is absolutely NO fishy smell — it just smells sweet.
I have a lot of favourite ways to prepare fish, but decided to use a Bahamian style preparation — which is tomato based. After making the tomato sauce, and cooking it down a while, nestle pieces of the fish into the tomato sauce. Cover and cook over low heat for about 15 minutes until the fish is just done.
I would normally serve the fish and tomato sauce over rice, but used my Chopped Cauliflower recipe instead of the starch tonight.
For a green vegetable, I turned to a favorite way to make Brussels Sprouts.
