Sausage, Peppers & Onions

Easy to prepare and delicious, you can have this main dish in the oven within minutes. Serve over rice, pasta, or on a hoagie roll — or just as is, if you are watching your carbs!

You could also prepare a simple red sauce to serve on the side (or use a good jar of marinara sauce). Add a salad or green vegetable and your meal is done!


  • 1 package Italian sausage (sweet or hot, your choice)
  • 1 large onion (or 2 medium onions), roughly sliced
  • Red, yellow, orange and/or green peppers, roughly sliced
  • Cloves of garlic, smashed or roughly chopped
  • 2 to 3 Tbsp. Olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. Italian seasoning blend


Select a roasting dish or casserole large enough to hold the ingredients. Slice the onion and your selection of peppers into large slices (larger slices work best, because they cook down). Smash whole cloves of garlic and add them to to the dish along with the package of sausages. Drizzle with olive oil, salt & pepper, Italian seasoning and toss ingredients to combine.

Bake in a 350 oven for 45 minutes to an hour, tossing ingredients in the pan half-way through cooking. You could reduce the cooking time by using a hotter oven. Remove when the ingredients are browned to your desire and toss one last time, so that all the ingredients are coated with pan juices.
