Frittata topped with roasted vegetables

This was a round-2 inspiration where I had leftover frittata and some leftover roasted vegetables in the refrigerator. I topped the frittata with the vegetables and re-heated in the microwave – it was even better than the first time around.

If you have a good quantity of the vegetables, it would be ideal to chop up half to put in with the frittata mixture, and reserve the nicest looking pieces for presentation on top of a newly baked frittata for serving.

You could top with a little more parmesan cheese!
