Cowboy Cookies

I saw this recipe on FaceBook, and the researched the origins. It was an annual article feature series on favorite recipes of Presidents’ wives published by Southern Living.

The quick little how-to thing I had seen on FaceBook had my mouth watering, so I researched the full Southern Living article and dove down the rabbit hole and researched some more of the Southern Living articles to see what recipes the wives had submitted.

I have to say, after recipe testing, these are really fantastic. Don’t go making “regular” cookies — this is Laura Bush’s TEXAS sized Cowboy Cookies, and you need to use a full ice cream scoop. Six to each sheet pan, and USE parchment paper to bake cookies on, if you have it! Here you go:

Dry Ingredients:

  • 3 C flour
  • 1 Tbsp. baking powder
  • 1 Tbsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 tsp salt
  • (whisk to combine)
  • In the bowl of a stand mixer:
  • 1.5 Cups butter (whip to soften, to a light yellow consistency)
  • 1.5 Cups sugar
  • 1.5 Cups brown sugar
  • 3 eggs (add one at the time)
  • 1 Tbsp. vanilla

Once well combined, gradually add flour mixture

Add:

  • 3 Cups semi-sweet chocolate chips
  • 3 Cups oats
  • 2 Cups sweetened flake coconut
  • 2 Cups chopped pecans

Use an ice cream scoop (1/4 cup each) to place 6 large cookies per sheet pan, lined with parchment paper. Cookies should be 3 inches apart.

Bake at 350 degrees for 18 minutes

Remove from oven, and place sheet pan on a wire rack to cool down before removing cookies
